It can be difficult – especially for a person who’s just learning to appreciate wine – to handle leftover wine perfectly. We’re all going to find ourselves in the situation where we just couldn’t finish the bottle and would like to enjoy the same quality wine when we’re ready to, so how do you keep the wine till then?
Well, here are a few tips from wine pros on how to preserve those last couple glasses from your precious open bottle
Re-cork It Properly
First of all, it’s important to replace the cork correctly. People often decide to use the cleaner side when putting the cork back on, but try to resist that. The stained side has already been exposed to the wine, and it tasted fine. The cleaner side may not be so clean, tainting your wine. Placing your cork back exactly as it was before is best.
Keep in Half Bottles
Exposure to air flattens your wine, killing its flavour and aroma. One way to avoid this is to use a funnel to pour the leftover into a screw-cap half bottle. Even if there’s a little air at the top, it’s far less than in a regular wine bottle.
Refrigerate your wine
It’s confusing how often people will keep leftover wine on the counter or dining table after they’ve re-corked it. They wouldn’t do that with food, so why with wine? The cool temperature won’t stop exposed wine from breaking down, but it will slow the process significantly.
Use a Coravin
Instead of opening your wine at all, use a Coravin. Coravins pierce the cork with a needle and top the bottle with argon gas. You can then pour what you want, remove the needle and the cork will seal naturally.
Finish the wine
So, there are roughly five glasses of wine in a regular 750-ml bottle. If you and your date for instance have two glasses each with your dinner and split that last glass, there’s nothing wrong with that. In fact, according to recent studies, 1–3 glasses a day may improve your heart health!
